White Chocolate Pistachio Blondies

You might want to stop whatever you are doing and make these blondies. I am not a huge white chocolate person, but these are insane. They are a good blend of nutty and chocolatey. I loved trying this new recipe and think you will too.

Serves; 10-12

Ingredients

  • 1 cup almond flour

  • 1 cup pistachios (blended into flour)

  • 1/2 cup oil (can be coconut or avocado)

  • 1/4 cup sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 tbsp pistachio butter

  • 1/2 cup white chocolate chips

Method:

  • Preheat the oven to 350F and line a square baking dish

  • Mix the dry ingredients and the wet ingredients separately. Add the wet mixture to the dry and mix to combine. Fold in the chocolate chips.

  • Pour into your baking dish and bake for 20-25 minutes, until a toothpick comes out clean.

  • Remove from the oven and allow to cool.

  • Top with a drizzle of pistachio butter and white chocolate chips!
