Ingredients:
For the Salmon:
2 salmon fillets
1 large slice sourdough bread (or 2 medium)
1/2 cup fresh parsley
1 clove garlic
Zest of 1 lemon
3 Tbsp Parmesan cheese
Salt and pepper, to taste
For the Yogurt Base:
3/4 cup Greek yogurt
1/4 cup crumbled feta
Juice of 1 lemon
1 clove garlic, minced
For the Veggies:
2 courgettes (zucchini)
2 spring onions
1 can chickpeas, drained and rinsed
1/2 cup fresh basil
Instructions:
Prep the Salmon: Pat dry the salmon fillets with a paper towel.
Make the Sourdough Crust: In a food processor, pulse the sourdough, parsley, lemon zest, Parmesan, salt, pepper, and garlic until it forms a coarse crumb mixture.
Crust & Chill: Pat the crumb mixture onto the salmon fillets and place them in the fridge while you prep everything else.
Make the Yogurt Base: In a bowl, combine Greek yogurt, crumbled feta, lemon juice, and minced garlic. Mash the feta into the yogurt and mix well.
Prepare the Veggies: Use a vegetable peeler to create zucchini ribbons. Drain and rinse the chickpeas.
Cook the Salmon: Place the salmon in an air fryer at 375°F (190°C) for 8-10 minutes, until golden and crispy.
