Sweet Potato Nachos + Rotisserie Chicken

So I am obsessed with sweet potatoes and these sweet potato nachos with rotisserie chicken might take the cake for sweet potato recipes. I was going to wait to post the recipe until this weeks newsletter, but you guys need it NOW. So here you go:)

This makes 4-5 servings

Ingredients

  • 3 sweet potatoes, thinly sliced

  • 1 tomato chopped

  • 1 can black beans, drained and rinsed

  • 1 can corn, drained and rinsed

  • About 1/3-1/2 cup goat cheese(could also do cheddar)

  • 1/2 red onion, thinly sliced

  • 1/3 cup parsley

  • 2 cups shredded rotisserie chicken

  • 2 tsp paprika

  • 2 tsp pepper

  • 2 tsp garlic salt

  • Avocado oil

  • Optional: jalapeño would be good on this too!


Method: 1. Preheat the oven to 425F 2. Coat the sweet potato in a drizzle of avocado oil and your spices 3. Line on a baking tray and roast for 25 minutes flipping half way through 4. In the last 2-3 minutes add your onion and some of the goat cheese 5. Remove from the oven and assemble your nachos with more cheese, chicken, black beans, corn, parsley, and tomato!!
