Super Greens Pasta Salad

This pasta salad is amazing to prep and store in the fridge for a quick and easy lunch. It's loaded with hearty green veggies and delicious sun-dried tomatoes. I love getting a lentil or chickpea pasta to use too! This recipe is great for the beach or for when you have guests and want to have lunches prepped.
Serves: 7-8

Ingredients:
1 bag of pasta of choice
~ 1 lb asparagus, chopped into bite-sized pieces
1 1/2 cups frozen peas
3/4 cup sundried tomatoes, chopped
1/2 cup parsley, chipped
For the Dressing:
1/3 cup mayonnaise
1/3 cup lemon juice
2-3 tbsp dijon mustard (I used 3)
Salt and pepper
2 cloves garlic, minced
Method:
1. Cook the pasta according to package directions.
2. While the pasta cooks, chop your asparagus and make the dressing.
3. 5 minutes before the pasta is done, add the asparagus. 2 minutes before it is done, add the frozen peas.
4. Drain and rinse the pasta and veggies and allow to cool. Then add the sundried tomatoes and parsley.
5. Toss the pasta with the dressing and enjoy! Store leftovers in the fridge.
