Spring Risotto-ish – A Bright & Fresh Seasonal Dish
Spring is officially here, and that means it’s time for fresh, vibrant dishes that celebrate the season! This Spring Risotto-ish swaps traditional rice for hearty farro, bringing a nutty, chewy texture to a dish that’s light, creamy, and packed with flavor. With bright peas, zesty lemon, and fresh mint, it’s the perfect meal for a cozy dinner. Bonus: It pairs beautifully with white fish for an elegant yet simple meal.

Spring Risotto-ish Recipe
Servings: 2-3
Ingredients
4 cups chicken broth
Olive oil
1 shallot, minced
2 cloves garlic, minced
1 cup farro
1/2 cup dry white wine
2 cups frozen peas
1/2 cup grated Parmesan
Zest of 1 lemon
1/4 cup fresh mint, sliced
Salt & pepper, to taste
Instructions
Step 1: Warm the Broth
In a small pot, heat the chicken broth over low-medium heat. Keep it warm while you prepare the dish.
Step 2: Sauté Aromatics
In a Dutch oven or large pot, heat a drizzle of olive oil over medium heat. Sauté the shallot and garlic until softened and slightly browned, about 3 minutes.
Step 3: Toast the Farro
Stir in the farro, coating it in the aromatics. Pour in the white wine and stir until absorbed.
Step 4: Cook the Farro
Add 1 cup of warm broth and stir occasionally. Once mostly absorbed, continue adding broth every 3-5 minutes, allowing the farro to absorb it before adding more. This process takes about 20-25 minutes.
Step 5: Make the Pea Purée
While the farro cooks, blend 1 cup of peas with 1/2 cup water, a pinch of salt, pepper, and a splash of olive oil until smooth.
Step 6: Finish the Dish
Once the broth is mostly absorbed, stir in the grated Parmesan, pea purée, remaining whole peas, and lemon zest.
Step 7: Garnish & Serve
Mix in the fresh mint, then serve with extra Parmesan, lemon zest, and mint on top. Enjoy immediately!
