Soba Noodle Salad

Serves: 5-6

Ingredients:

  • 2-3 cups soba noodles (I used two packets of the trader joes Thai wheat noodles)

  • 2 cups purple cabbage, thinly sliced

  • 1 cup carrots, peeled and grated

  • 1/4 cup cilantro, chopped

  • 1/4 cup green onions, sliced thinly

  • 3 Tbsp chili garlic cashews, chopped

  • 2 red bell peppers, julienned

  • 1 cup cooked and shelled edamame

For the dressing:

  • 1 Tbsp sesame oil

  • 2 Tbsp low sodium soy sauce

  • 2 Tbsp rice wine vinegar

  • 1 Tbsp tahini

  • 1 tsp pure maple syrup

  • 1 tsp garlic, minced

  • 1/4 tsp ground ginger

  • 1/4 tsp black pepper

  • 1/4 tsp sea salt

Method:

  1. Cook soba noodles according to the package’s instructions. Drain and set aside. 

  2. For the dressing, add all the ingredients to a mason jar and shake well.

  3. In a large salad bowl, assemble the salad. Add all the ingredients into the bowl and drizzle the dressing over the top. Toss until everything is well combined.

  4. Serve with extra cashews and cilantro and enjoy!
