Simple Salmon Tray Bake

The perfect recipe for an easy weeknight family dinner. Some of my favorite simple recipes are tray bakes. There is something so satisfying about putting everything onto one dish and popping it into the oven. In this recipe, the salmon, potatoes, and brussels come out looking so impressive. This recipe could easily be adapted to use any fish or any veggies as well! Another great option to sub the brussel sprouts for would be asparagus.


For the Salmon

4 Wild Caught Alaskan Salmon fillets

2 tbsp extra virgin oil

2 1/2 tbsp dijon mustard

3 tbsp honey

1/2 tsp paprika

1 tsp garlic powder

Juice of 1 lemon

For the potatoes:

1 lb petite potatoes, sliced in half

1 tbsp extra virgin olive oil

2 cloves garlic

3 tbsp feta cheese

Fresh thyme

Salt and Pepper

Zest of 1/2 lemon

For the Brussels:

1 lb brussel sprouts, slices in half and ends removed

1 tbsp extra virgin olive oil

1 tbsp garlic powder

1 tbsp balsamic glaze

Salt and Pepper

Method:

1. Preheat your oven to 400 degrees F

2. Line a baking tray with parchment paper.

3. Toss the brussles in the olive oil, salt, pepper, and garlic powder.

4. Toss the potatoes with the olive oil, garlic, thyme, salt, and pepper.

5. Bake for about 25 minutes.

6. While the potatoes and brussels are baking, prepare your salmon rub by combining the olive oil, paprika, garlic powder, dijon mustard, and honey in a bowl.

7. Add the mixture to the top of each piece of salmon, ensuring that each piece is covered. Add salt and pepper on top.

8. After the potatoes and brussels have begun to brown in the oven, remove the tray and add the salmon to the middle.

9.Bake for another 10-15 minutes in the oven,

10.Remove the tray from the oven and add feta and lemon zest to the potatoes, balsamic vinegar to the brussels, and lemon juice to the salmon.
