Shaved Brussel and Arugula Salad

Serves: 5-6

Ingredients:

  • 1 bag of arugula, washed

  • 3 cups shaved brussels sprouts

  • 1 cup cherry tomatoes, sliced

  • 1/3 cup parsley, chopped

  • 1 cup cooked green peas

  • 2 Persian cucumbers, chopped

  • 1/3 cup roasted sunflower seeds

  • 1/2 cup feta cheese

For the Dressing:

  • 1/3 cup olive oil

  • 2 Tbsp apple cider vinegar

  • 1 Tbsp honey

  • Juice and zest of 1 lemon

  • Heavy pinch of salt and pepper

Method

  1. Combine all of the salad ingredients in a large bowl

  2. Combine all of the dressing ingredients into a mason jar and shake well to combine

  3. Add the dressing to the salad and mix to combine

  4. Top with your favorite protein and enjoy (I did TJ chicken meatballs)
