Salted Caramel Banana Bread

I used to think I made a pretty good banana bread… but this time… I’ve done it. I’ve made the best banana bread ever. This salted caramel banana bread is simply perfect.

Salted Caramel Banana Bread
Makes 2 loaves
Ingredients:
4 ripe bananas
2 Tbsp brown sugar
2 Tbsp butter, softened
3.5 cups all purpose flour
1 Tbsp baking soda
1 1/2 baking powder
Heavy pinch of salt
1 1/2 cup white sugar
2/3 cup brown sugar
8 eggs
1.5 cup olive oil
2 cups cottage cheese
For the salted caramel
16 pitted dates
1/2 cup hot water
1/2 cup milk
1 tsp salt
Method:
Preheat your oven to 350F
Mash together your bananas, 2 Tbsp brown sugar, and 2 Tbsp butter in a bowl and set aside
In a large mixing bowl combine your flour, white sugar, brown sugar, baking powder, baking soda, and salt. Mix to combine
Add in your eggs and oil and mix to combine
Add the cottage cheese and banana mixture and stir
Pour the batter evenly into 2 greased loaf pans and bake at 350 for 1 hour
While they are baking, add the salted caramel ingredients into a food processor and pulse until thick and combined
Once the banana bread is done and a knife comes out clean, allow to cool for a minute and then top with your caramel and enjoy!
