Salsa Chicken Skillet

Serves: 5-6

  • 3 1/2 cups cauliflower rice

  • 1 lb chicken breast

  • 2 cloves garlic, minced

  • 1 tsp chili powder

  • 1 tsp paprika

  • 1 tsp cumin

  • Salt and Pepper

  • 1 can black beans

  • 1 can green chiles

  • 2 Tbsp Green onion, chopped

  • 2 Tbsp cilantro, chopped

  • 1 cup salsa (plus extra for topping)

  • 1/3 cup shredded cheese

Method:

  1. Coat your chicken breast with 1/2 tsp paprika, 1/2 tsp chili powder, and 1/2 tsp cumin

  2. Cook the chicken in a large skillet with a drizzle of olive oil on medium-high heat for about 5 minutes on each side or until cooked through

  3. Remove the chicken from the pan and set aside on a plate

  4. Add in the cauliflower rice, green onion, garlic, and remaining spices. Stir to combine

  5. Cook for about 5-8 minutes until the rice is tender and there is not much liquid

  6. Add in the black beans, green chiles, and salsa. Stir to combine

  7. Add the cilantro and the chicken back in

  8. Top with additional salsa as desired and spread the cheese over the top

  9. Cover the skillet for about 1-2 minutes until the cheese melts

  10. Serve with extra cilantro and enjoy!
