Salmon & Tomato Farro Bowl

This salmon and tomato farro bowl was perfect for an easy weeknight dinner to make for my family. It takes about 30 minutes to make and looks so professional, but is truly so easy. I have started to love cooking with farro because it is the perfect in-between of a rice and a pasta.

Serves: 4

Ingredients

  • 1 ½ cups farro, cooked according to the package

  • 1 cup cilantro, finely chopped

  • 2 cloves minced garlic

  • 1 tsp honey

  • 3 tbsp olive oil

  • 2 tbsp white wine vinegar

  • Salt and Pepper

  • ½ cup red onion, chopped

  • 1-2 lbs salmon

  • 1 ½ pint cherry tomatoes






Instructions:

  1. Cook the farro according to the package instructions.

  2. While the farro is cooking, finely chop the cilantro. Make the dressing in a bowl by whisking the olive oil, honey, white wine vinegar, garlic, salt, and pepper. Add ⅓ of the dressing to the chopped cilantro and let marinate in a bowl.

  3. In a bare cast iron skillet, heat the salmon until halfway cooked before adding 1 tbsp of olive oil and the tomatoes. Broil in the oven until the salmon is slightly browned and the tomatoes have popped and darkened.

  4. On medium-high heat, add a drizzle of olive oil to a pan and cook the red onion until slightly darker and more translucent.

  5. Combine the farro, cilantro mix, tomatoes, and onion in a large bowl. Add a generous pinch of coarse sea salt to the rest of the dressing. Top the bowl with your cooked salmon, and enjoy!

  6. PS. I think this recipe would've been even better with some chopped pistachios or with a drizzle of balsamic glaze :) I added both to my leftovers!
