Roasted Veggie Couscous Salad with Lemon Basil Vinaigrette

This summer roasted veggie salad is so delicious, but the main event has to be the dressing. The light basil lemon vinaigrette is so fresh and adds so much dimension to the dish. You can really add any roasted veggies you have on hand too!

Serves: 4-5

For the salad:

  • 2 1/2 cups cooked Trader Joes Ancient Grain Mix

  • 3 cups arugula

  • 1 yellow squash, sliced

  • 1 zucchini squash, sliced

  • 1 1/2 cups basil

  • 3 bell peppers, sliced

  • 1/2 bunch asparagus, roughly chopped

  • 1/2 medium red onion, sliced

  • 1/2 cup cherry tomatoes, sliced

For the Dressing:

  • 1 1/2 cups basil

  • 1/2 cup olive oil

  • 2 tbsp lemon

  • Dash of salt

  • 1 tsp red wine vinegar

  • 1 tsp honey





Method: 1. Grill all of the veggies until they are slightly browned 2. Add all of the dressing ingredients into a high-speed blender and blend until smooth. 3. Cook the grains according to package directions. 4. Add your veggies to a large bowl and mix in the couscous, arugula, and dressing. 5. Top with your favorite protein and enjoy! This is also delicious with some creamy goat cheese.
