How to Make Rainbow Thai Salad
Ingredients
For the Salad
1/2 red cabbage, shredded
1/2 green cabbage, shredded
3 cups carrot, shredded
1 cup shelled edamame
1/2 cup cilantro, chopped
1/2 cup green onion, chopped
1/4 cup peanuts, chopped
For the Chicken
1 lb chicken breast
1/4 cup low sodium soy sauce
1 tbsp minced garlic
1 tbsp brown sugar
1 tbsp tahini
1 tbsp avocado oil
1 tbsp rice vinegar
2 tsp fresh grated ginger
1 tbsp sriracha
1 tbsp sesame seeds
For the Creamy Peanut Dressing
3 1/2 tbsp natural creamy peanut butter
3 tbsp rice vinegar
2 tbsp honey
1 1/2 tbsp avocado oil
2 1/2 tbsp low sodium soy sauce
2 tsp fresh grated ginger
1 tsp minced garlic
2 tsp sriracha
2-3 tbsp warm water (to thin as needed)
Instructions
Step 1: Prepare the Salad
In a large bowl, combine all salad ingredients: red cabbage, green cabbage, shredded carrots, edamame, cilantro, green onions, and chopped peanuts. Set aside.
Step 2: Marinate & Cook the Chicken
In a bowl, whisk together soy sauce, garlic, brown sugar, tahini, avocado oil, rice vinegar, ginger, sriracha, and sesame seeds. Add the chicken and let it marinate for 10 minutes.
Heat a medium-high skillet and cook the chicken until it reaches an internal temperature of 165°F. Pour in the remaining marinade and let it cook until thickened. Slice the chicken into bite-sized pieces.
Step 3: Make the Dressing
Whisk together all dressing ingredients in a small bowl, adding warm water as needed to reach a pourable consistency.
Step 4: Assemble & Serve
Toss the salad with the creamy peanut dressing, then top with the sliced chicken. Garnish with extra peanuts and cilantro if desired. Enjoy immediately or store in airtight containers for meal prep!
