Peach & Farro Salad with Mediterranean Salmon

The most perfect summer salad is here: this peach and farro salad with mediterranean dill salmon. If you are looking for something both filling and refreshing, this salad is it! It is full of flavor, but also super easy and quick to make!

Serves: 2-3

Ingredients

  • 1 bag spinach and arugula mix

  • 2 peaches, thinly sliced

  • 1 1/2 cups farro, cooked

  • 1/2 cup cherry tomatoes, sliced

  • 1/3 cup herbed goat cheese, crumbled

  • 1/2 cup thinly sliced red onion

  • 1-2 slices salmon

  • 1 tsp garlic

  • 1/2 tsp dill

  • 1 tbsp avocado oil

  • 1 tsp Mediterranean herbed sea salt

Dressing:

  • 1/2 cup balsamic vinegar

  • 1/3 cup olive oil

  • 1 tsp dijon mustard

  • 1 tbsp maple syrup

  • Pinch of salt and pepper

Method:

1. Cook the farro according to package directions and then allow to cool.

2. Slice the onion, peaches, tomatoes, and add to a large bowl with your greens, goat cheese, and farro.

3. Coat your salmon with avocado oil, garlic, salt, and dill.

4. Over medium, high heat, pan-sear the salmon for 5 minutes on each side.

5. Mix the dressing in a mason jar and then mix your salad.

6. Top with your salmon and enjoy!
