Ingredients:
1 Tbsp olive oil
~16 Amylu’s chicken meatballs
5 cloves garlic, minced
3/4 cup sundried tomatoes, drained
2 tsp onion powder
1 tsp chili flakes
1 cup orzo
2 3/4 cups bone broth
3 big handfuls of spinach
3/4 cup cream, coconut milk, or half & half
3/4 cup grated Parmesan (plus extra for topping)
Method:
1️⃣ Heat olive oil in a large pot over medium-high heat. Add meatballs and cook for ~3 minutes, stirring frequently.
2️⃣ Stir in garlic and sundried tomatoes; cook for 2 more minutes.
3️⃣ Add spices, orzo, and bone broth, then stir. Reduce heat, cover, and simmer for 12 minutes, stirring occasionally to prevent sticking.
4️⃣ Stir in spinach and cream until spinach wilts.
5️⃣ Mix in Parmesan, then serve with extra cheese on top.
