No-Bake Cookie Dough Bars

Serves: 8-10

Ingredients:

  • 1 ½ cups almond flour

  • 1/3 cup maple syrup

  • ¼ cup melted coconut oil

  • ¾ cup peanut butter

  • ¾ cup chocolate chips

  • 1 tsp vanilla extract

  • 1 tsp salt

  • 1 Just Thrive probiotic capsule

Method

  1. In a bowl, combine the almond flour, maple syrup, peanut butter, coconut oil, vanilla, probiotic powder, and salt.

  2. Mix until a thick dough forms.

  3. Fold in half of the chocolate chips.

  4. Spread the dough mixture onto a parchment paper lined baking tray and place in the freezer to set.

  5. In a small bowl, add the other half of the chocolate chips and 1 tbsp coconut oil. Melt in the microwave or using the double boiler method.

  6. Remove the dough from the freezer and spread the melted chocolate on top.

  7. Place the bars back in the freezer for 10 min to set.

  8. Remove, slice, and enjoy! These bars are best kept in the fridge or the freezer.
