Miso Crunch Shrimp Salad

Serves: 4-5

Ingredients

  • 5 cups kale

  • 4 cups shredded green or purple cabbage

  • 2 avocados, cubed

  • 1 lb shrimp, cooked

  • 1 cup chili-flavored peanuts

  • 1/2 cup cilantro, chopped

  • 1/2 cup green onion, chopped

For the dressing:

  • 3 Tbsp white miso

  • 1/3 cup peanut butter

  • 1 lime, juiced

  • Salt, Pepper

  • 1/4 cup sugar

  • 2 cloves garlic, minced

Method:

  1. Cook your shrimp and combine all of the salad ingredients.

  2. Mix your salad dressing in a mason jar.

  3. Combine the salad and the dressing and serve!
