Mediterranean Pasta Salad

Two things I love: Mediterranean food and pasta salad. I made this recipe for a Blender Bombs team dinner this week and we loved it! It was great for a big group and perfect for a hot summer dinner party. I love all of the color in this dish and this pasta is really yummy!

Serves: 8-10

Ingredients

  • 2 bags Trader Joes Brown Rice & Quinoa Fusilli Pasta

  • 4 bell peppers, chopped

  • 1 Persian cucumber, chopped

  • 3/4 red onion, chopped

  • 4 Tbsp dill, chopped

  • 1 cup feta, crumbled (I like the Mediterranean-style feta from Trader Joes Dressing:

  • 1 cup tahini

  • 2 Tbsp red wine vinegar

  • 2 Tbsp Olive oil

  • 1/3 cup lemon juice

  • 1/2 cup water

  • 1 Tbsp maple syrup

  • 1 tsp paprika

  • 1 1/2 tsp garlic, minced

  • 1 tsp salt

  • 1 tsp cumin

Method:

1. Cook the pasta according to package directions

2. Chop all of your veggies

3. Mix your dressing ingredients into a mason jar and shake well.

4. Allow the pasta to fully cool, add in the veggies, feta, dill, and dressing. Mix well to combine.
