Mediterranean Dense Bean Salad

Anything Mediterranean you can count me in and dense bean salads have become a staple in my meal prep routine so this recipe was an immediate yes !
Ingredients:
- 1 can garbanzo beans, drained and rinsed
- 1 can great white northern beans, drained and rinsed
- 1 cup sundried tomatoes, julienned
- 1/2 cup red onion, chopped
- 1/2 cup parsley, chopped
- 5 small chicken thighs
- (I forgot to add 1/2 cup feta but I meant to 😒)
For the dressing:
- 1/3 cup olive oil
- 3 Tbsp lemon juice
- 1 tsp garlic powder
- 2 tsp honey
- Salt and pepper
Method:
1. Season your chicken thighs to your liking (I did the @ballerinafarm paprika salt)
2. Air fry at 400F for 10-12 minutes until cooked through
3. In a large bowl add your beans, sundried tomatoes, onion, feta, and parsley
4. In a mason jar, combine your salad dressing and shake well to combine
5. Cut your chicken thighs into bite sized pieces and add to the bowl
6. Add the dressing and mix well to combine
7. Enjoy!
