Healthy Blueberry Breakfast Muffins

Serves: 8 Muffins

Ingredients

  • 2 mashed bananas

  • 2 eggs

  • 1/4 cup peanut butter

  • 1/3-1/2 cup oat flour

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1 cup blueberries (I used frozen)

Method:

  1. Mix the wet ingredients together in a large bowl

  2. Add in the dry ingredients and mix to combine

  3. Fold in the blueberries

  4. Spoon into a lined muffin tin

  5. Bake at 350 degrees F for 17-20 min

  6. Remove from the oven, allow to cool, and enjoy!
