I made a delicious tangy grouper with avocado salsa on top and served it over warm farro and cucumbers! This recipe came together in a total of 15 minutes and was so good! I made this for a weeknight dinner for myself and some friends and it was easy enough to do while hosting, but looks super impressive!
Serves: 1

Ingredients
3-4 grouper filets
2 tbsp melted butter
2 tsp coconut aminos
1/2 tsp ground ginger
1 tbsp olive oil
1 large avocado, diced
1/2 tsp minced garlic
Juice of 1 lime
1/2 cup sliced cherry tomatoes
3 tbsp cilantro, chopped
Optional: Red pepper flakes

Method:
1. Combine the butter, coconut aminos, ginger, and olive oil in a bowl and mix to combine.
2. Add this mixture to the fish filets, mix well, and let marinate in the fridge for 20 minutes.
3. Chop your cilantro, tomatoes, and avocado and add to a bowl with your garlic, lime, and salt.
4. Cook the fish on medium-high heat for 4 minutes on each side or until slightly browned and cooked through.
5. Assemble your bowl with whatever you like and top with red pepper flakes!
