Grilled Peach Summer Salad

Meet this elite summer salad with grilled peaches and squash. The dressing is a tangy apple cider vinegar + honey mustard mix that works really well with the creamy goat cheese.

Serves: 3-4

For the salad:

  • 3-4 cups arugula

  • 1 yellow squash, sliced

  • 1 zuchinni squash, sliced

  • 1/2 cup basil

  • 3 peaches, sliced

  • 1/3 cup goat cheese

  • 2 tbsp roasted sunflower seeds

  • 1 cup farro, cooked

For the Dressing:

  • 1/4 cup apple cider vinegar

  • 1/3 cup EVOO

  • 2 tbsp honey mustard

  • Dash of salt and pepper

Method:

1. Cook the farro according to package directions

2. Slice your squash and peaches

3. In a large bowl, combine the arugula and basil

4. Grill the squash and peaches until slightly soft and grill lines appear on both sides

5. Drain and rinse the farro. Allow it to cool. 6. Combine all of the salad dressing ingredients into a mason jar and shake to mix.

7. Add the farro, veggies, and peaches to the salad bowl.

8.Top with goat cheese, sunflower seeds, dressing, and the optional pickled onions!
