Goat Cheese & Sun Dried Tomato Chicken

Serves: 4-5

Ingredients

  • 3-4 chicken breasts

  • 1 shallot

  • 3 garlic cloves

  • Olive oil

  • 3 cups spinach

  • 8 oz goat cheese

  • 3-6 oz sun-dried tomatoes

  • Your favorite simple salad (I did arugula, toasted walnuts, tomatoes, sauteed veggies, and simple vinaigrette)

Method:

  1. Cook the shallot and garlic until fragrant. Add in the spinach and cook until wilted.

  2. Mix your goat cheese, spinach, shallot, garlic, and sun-dried tomatoes in a bowl.

  3. Place the chicken in a baking dish, cut a slit in the middle, and stuff each chicken breast with the mixture. Spread the remaining mixture on top.

  4. Bake at 375F for 30-35 minutes.

  5. Serve with your favorite simple salad!
