Frozen Berry Chia Pudding

This recipe is honestly a super simple week day recipe to add to your rotation. You can prep it the night before or in the morning and it tastes so delicious. Bonus, it really helps get things moving if you know what I mean... I love to top it with fresh banana, peanut butter, and honey!

Serves: 1

Ingredients:

  • 3 tbsp chia seeds

  • 1/2 cup almond milk

  • 1/4 cup frozen berries

  • 1 tbsp goji berries

  • 1 tbsp slivered almonds

  • 1/4 tsp vanilla extract

  • 1 tbsp peanut butter

  • Optional: 1/2 scoop vanilla protein powder


Method

1. Combine the chia seeds, almond milk, vanilla, and frozen berries in a mason jar or Tupperware. Optional: Add in protein powder here as well.

2. Allow to sit in the fridge for 30 minutes.

3. Once thickened, add your goji berries, peanut butter, almonds, and any other toppings you like! (I like to add banana too)

4. Mix and enjoy!
