Ingredients:

1 Persian cucumber, chopped

1 punnet cherry tomatoes, sliced

1 can garbanzo beans

1 can great white northern beans

1/4 cup parsley, chopped

1 cup roasted red peppers, chopped

1/2 cup grilled artichokes, chopped

1/2 cup feta


For the dressing:

1/4 cup olive oil

1 lemon, juiced

2 tsp honey

1 tbsp Dijon mustard

Salt and pepper


Method:

1. Combine all of your chopped veggies into a large mixing bowl

2. Drain and rinse the beans before adding to your bowl

3. Add in the parsley and feta

4. Toss with the dressing and enjoy!
