Christmas Crack Cookies

Updated: Jan 10

Oh my gosh. These cookies are top 3 of all time for sure (emily rated them #1 that I’ve made so that’s saying something). These have all of the flavor of your classic Christmas crack, but in a cookie!

Ingredients:

* 1 cup @kerrygoldusa butter

* 1 cup brown sugar

* 1/2 cup white sugar

* 1/4 cup tbsp plain greek yogurt

* 2 egg

* 2 tsp vanilla

* 2 1/2 cups flour

* 1 tsp baking soda

* 1 tsp salt

* 1 cup saltine cracker chunks

* 1 cup toffee bits

* 1 cup chocolate chips

Method:

1. Preheat your oven to 350F and brown your butter by adding it to a pan over medium heat. Once it gets brown and has a bit of sediment at the bottom it’s done. Allow it to cool to room temp

2. In a large mixing bowl, combine your brown and white sugar, brown butter and using a hand mixer, mix until light and fluffy

3. Add in your Greek yogurt, eggs, and vanilla and mix

4. Now add the flour, baking soda, salt. Mix until combined.

5. Fold in your saltines, toffee, and chocolate. Allow the batter to cool in the fridge for 30 minutes- 1 hour

6. Roll into balls and place on a lined baking sheet. Bake for 9 minutes and then allow them to cool and enjoy!
