Carrot Cake Baked Oats

Serves: 10-12

Ingredients:

  • 4 bananas, mashed

  • 4 cups oats

  • 1 cup grated carrot

  • 2 tbsp nut butter

  • 4 tsp cinnamon 

  • 2 tsp vanilla extract 

  • 1 tsp salt

  • 1 tsp baking powder

  • 2 tbsp maple syrup 

  • 1 cup chopped walnuts

  • 3 cups almond milk

  • Greek yogurt to top

Method:

  1. Preheat the oven to 350F

  2. Grease the baking dish with some oil and then add the mashed bananas

  3. Add in the rest of the ingredients and mix well until fully combined. 

  4. Bake for 40 minutes until golden. 

  5. Allow them to cool before topping with Greek yogurt and more maple syrup! Enjoy!!
