BBQ Chicken Stuffed Sweet Potatoes

Serves: 6-7

Ingredients:

  • 1 sweet potato

  • 1 cup shredded chicken breast 

  • 1/3 cup sugar free BBQ sauce

  • 1 Tbsp cilantro, chopped

  • 1/4 cup TJ cowboy caviar

  • A few slices of red onion, sliced (pickled onions would be good too!)

Method:

  1. Poke 4-5 holes in your sweet potato with a fork and roast at 400 F for 60 minutes (you could also poke holes and microwave for 5-6 min if you don’t have time to roast)

  2. Mix your shredded cooked chicken (could use rotisserie chicken) with your BBQ sauce

  3. Once your sweet potato is done, slice in half and mash some of the inside so there is a nice pocket in each half. 

  4. Top the potato halves with BBQ chicken, some cowboy caviar, sliced onion, and chopped cilantro 

  5. Enjoy!!
