Asian Turkey Lettuce Cups

Serves: 8-10

Ingredients

  • 2 lbs lean ground turkey

  • 1 yellow onion

  • 4 cloves garlic

  • 1 lb mushrooms

  • 2, 8 oz cans of water chestnuts

  • 4 green onions

  • 2 tbsp ground ginger

  • 1/3 cup soy sauce

  • 1/4 cup rice vinegar

  • 1/4 cup chili paste

  • 3 Tbsp hoisin sauce

  • 3 packs bibb lettuce

  • 2 cups carrots, matchsticks

  • 1 pack bean sprouts

  • Chili peanuts

  • Sriracha

Method:

  1. In a large skillet, heat the onion and garlic until translucent and fragrant.

  2. Add in the mushrooms and cook until tender.

  3. Add in the turkey and cook until brown.

  4. Add the hoisin, soy sauce, chili paste, ginger, and rice vinegar. Cook for about 3 minutes.

  5. Add in the water chestnuts, green onion, and carrots

  6. Serve on bibb lettuce and top with chili peanuts, bean sprouts, and sriracha
