Ancient Grain Kale & Feta Bowl

Serves: 5-6

Ingredients

  • 2 cups ancient grain mix from TJ (or Farro)

  • 1 red onion

  • 2 cups cherry tomatoes

  • 3-4 cups kale

  • 4 cloves garlic

  • Juice of one lemon

  • 2 tsp salt

  • 1/3 cup vegetable broth

  • Toppings: Basil, Chili Flakes, Feta

Method:

  1. Cook the ancient grain mix or farro according to package directions. When halfway done, add the tomatoes, onions, garlic, and salt.

  2. In the last 5 min of cooking, when the grain mix is thick, stir in the kale. Add in the lemon juice in the last 1 min.

  3. Top with your basil, chili flakes, and feta! (Parmesan would also be a good option!)
